Corn Relish

To be honest, I don’t really like relish, but I felt really excited to make this recipe for some reason. Maybe it’s because i don’t have much of a sweet tooth and I’ve been posting so many jam and jelly recipes. It was fun to make, and I have seen people who do appreciate relish eat this by the spoonful. I used fresh corn for this recipe, but you could also easily make this with frozen corn. Try it out!


  • 10 cups of corn kernels (about 2 dozen small cobs), blanched
  • 4 roma tomatoes, cubed
  • ½ a red onion, chopped
  • 1 green bell pepper, cubed
  • 1 red bell pepper, cubed
  • 2 hot yellow peppers, minced
  • 2 stalks of celery, chopped
  • 3 cups of white vinegar
  • 2 cups of sugar
  • 3 tbsp of mustard powder
  • 2 tsp of salt
  • 2 tsp of ground turmeric
  • 2 tsp of ground cumin
  • 2 tsp celery seeds



  • Put corn, tomatoes, onion, peppers and celery into a very large pot
  • Add vinegar and sugar, and bring to a boil
  • Add spices
  • Let cook for around 25 – 30 minutes, stirring occasionally
  • Process in boiling water bath for 15 minutes
